Sweet Potato Curry
The ingredient amounts in this recipe are given as a guide.
You can use many different types of vegetables in this curry recipe, as long as you remember to count those that are exchanges. In this recipe I have used all “free ” vegetables. I’ve used a mixture of white and orange sweet potatoes here, but if you only have one variety, it doesn ‘t matter.
Also, the amount of curry powder you use also depends on how strong a flavour and hot you like it. Two teaspoonfuls will usually produce a mild flavour, ideal for the young. You can then experiment by adding more to the recipe and also with different types of curry powder as they all have a different taste and strength. If you like a hotter curry, just add more chopped chillies.
METHOD
Serve hot with Fate flat breads: Chappatis [1] or Fate Pittas [2].
The curry freezes well.
