Sweet Potato Curry

The ingredient amounts in this recipe are given as a guide.

You can use many different types of vegetables in this curry recipe, as long as you remember to count those that are exchanges. In this recipe I have used all “free ” vegetables. I’ve used a mixture of white and orange sweet potatoes here, but if you only have one variety, it doesn ‘t matter.

Also, the amount of curry powder you use also depends on how strong a flavour and hot you like it. Two teaspoonfuls will usually produce a mild flavour, ideal for the young. You can then experiment by adding more to the recipe and also with different types of curry powder as they all have a different taste and strength. If you like a hotter curry, just add more chopped chillies.

  • 2 tbsp oil
  • 2 tsp cumin seeds
  • 1-2 cloves garlic, chopped
  • 1 tbsp fresh ginger, chopped or grated
  • l or 2 medium sized fresh chillies,
  • chopped, (or more if you want the curry to
  • be hotter)
  • 250 g onion, roughly chopped
  • 3 tsp ground coriander
  • 4 tsp Madras curry powder
  • 2 tbsp fresh coriander, roughly chopped
  • 1 tbsp tomato puree
  • 500g Sweet Potatoes, cut into medium sized cubes
  • 150g French beans, fresh or frozen, snapped into medium sized pieces
  • 2 x 400g tins tomatoes
  • 200mls water
  • salt and pepper to season


  1. Heat the oil in a saucepan.
  2. Add the cumin seeds and cook over a gentle heat for about 30 seconds until they turn darker, but not burnt.
  3. Add the chopped garlic, ginger and chillies. Cook for about 1 minute.
  4. Add the onion and leave to cook over a high heat for about 5 mins, till softened and starting to brown lightly.
  5. Add the ground coriander, curry powder, and fresh coriander, stir well. Leave to cook for a couple of minutes to cook the spices.
  6. Stir in the tomato puree.
  7. Add the Sweet Potato, and French beans, then add the tins of tomatoes and water. Stir, and use the back of the spoon to crush the tomatoes.
  8. Season with salt and pepper, and leave to gently cook for about 30 mins or until the vegetables are cooked.

Serve hot with Fate flat breads: Chappatis or Fate Pittas.

The curry freezes well.
