
Onion Bhaji
INGREDIENTS
- 1/2 packet/250g Loprofin Mix
- 1/2 sachet (1tsp) dried yeast (enclosed with mix)
- 2 x 5mlsp (2tsp) medium curry powder
- 1.25mlsp (1/4 tsp) salt
- 1 x 15mlsp (1tbsp) olive oil
- 125ml (1/4 pint) warm water
- 50ml (2floz) Loprofin PKU Drink
- 1 large onion, peeled and chopped
- Oil for deep frying
METHOD
- In a large bowl combine the Loprofin Mix with the yeast, curry powder and salt.
- Add the olive oil, warm water and Loprofin PKU drink to the dry ingredients, using an electric mixer beat for 1 minute (with a wooden spoon 2 – 3 minutes) until a smooth glossy batter.
- Cover the bowl with cling film and put in a warm place to prove, until doubled in size, approximately 20 minutes.
- With a wooden spoon, briskly stir the chopped onion into the batter.
- Preheat the oil. Drop tablespoons of the batter, a few at a time, into the hot oil and fry over a moderate heat until puffy and golden brown, approximately 3 minutes. Drain on kitchen paper.
- Repeat with remaining batter, until all Bhaji are cooked.
- Serve hot or cold.
