Onion Bhaji

Onion Bhaji

  • 1/2 packet/250g Loprofin Mix
  • 1/2 sachet (1tsp) dried yeast (enclosed with mix)
  • 2 x 5mlsp (2tsp) medium curry powder
  • 1.25mlsp (1/4 tsp) salt
  • 1 x 15mlsp (1tbsp) olive oil
  • 125ml (1/4 pint) warm water
  • 50ml (2floz) Loprofin PKU Drink
  • 1 large onion, peeled and chopped
  • Oil for deep frying

  1. In a large bowl combine the Loprofin Mix with the yeast, curry powder and salt.
  2. Add the olive oil, warm water and Loprofin PKU drink to the dry ingredients, using an electric mixer beat for 1 minute (with a wooden spoon 2 – 3 minutes) until a smooth glossy batter.
  3. Cover the bowl with cling film and put in a warm place to prove, until doubled in size, approximately 20 minutes.
  4. With a wooden spoon, briskly stir the chopped onion into the batter.
  5. Preheat the oil. Drop tablespoons of the batter, a few at a time, into the hot oil and fry over a moderate heat until puffy and golden brown, approximately 3 minutes. Drain on kitchen paper.
  6. Repeat with remaining batter, until all Bhaji are cooked.
  7. Serve hot or cold.

Makes 24.
