- 4 Large Tomatoes
- 2 Spring Onions
- 1 Tablespoon white wine vinegar
- 3 Tablespoons olive oil
- 1 Teaspoon caster sugar
- 1 teaspoon of dried basil, mint, or coriander
- Salt and pepper
- Halve and de-seed the tomatoes and roughly dice.
- Finely slice the spring onions and mix with the tomatoes, vinegar, oil, sugar and herbs.
- Season to taste with salt and pepper.
- Chill until required.
