Using the basic bread recipe:

Take a piece of dough weighing about 100g and place it onto a work surface lightly dusted with All-Purpose Mix.

With your hands also dusted, gently roll the dough into a  sausage shape. Place it onto a greased baking tray (you will need more than one tray if you are making the full recipe) and make sure they fit under the grill.

– Gently pat out the dough into a large, oval pitta bread shape, about ½ cm thick. 18cm long and 10cm wide. Cover and prove in the usual way until they have risen to at least twice their thickness.

– Pre-heat the grill and place a baking tray of proved pitta breads under the grill to cook. Keep an eye on them as the tray may need to be turned around so that the pitas cook evenly. The first side will take about 11/2 minutes to cook. Use a wide spatula to turn them over and cook for another minute or so until cooked through.

– Place on a wire rack to cool.
