Fate Lemon Cake

INGREDIENTS

For the cake:

  • 1 X 250G packet Fate Cake Mix
  • grated rind of 1 large lemon
  • 65g soft margarine
  • 125mls warm water

For the topping

  • 50g granulated sugar
  • 1-2 tblsp lemon juice

METHOD

  1. Pre-heat the oven to gas mark 5/190 degrees
  2. Place the Fate Cake Mix into a mixing bowl. Add the lemon rind, margarine and water and mix quickly with a wire whisk for 1 min.
  3. Place the mixture into a greased cake tin measuring approx 26cm x 17cm x 3cm deep and use a spoon to spread the mixture to edges of the tin.
  4. Bake for 30-35 mins until risen and firm
  5. Take out of the oven and remove from the tin onto a wire rack. Leave to cool for a couple of minutes while you prepare the Topping.
  6. Place the granulated sugar into a dish and add enough lemon juice so that all the sugar is moistened with the juice, but not enough to dissolve it.
  7. Give it a stir and spoon it onto the top of the warm cake. Leave to cool completely then cut into square or fingers.

  1. I live in the US, what can I use other then Fate to make this cake? I have Cambrooke Mix Quick.
