Fate Fairy Cakes

Delicious and so quick and easy to prepare. This recipe can also be prepared and cooked as a tray bake cake. Use a tin measuring 26cms x 17cms x 3cms deep which is greased and lined with greaseproof paper.

For fairy cakes, just place 12 paper cases into a patty tin.

The cakes can also be made by replacing the water and vanilla with pure fruit juice, the kind you get in a carton. Orange, Apple and Pineapple juice all work well. Just make sure it is unsweetened, pure fruit juice. L like to use Orange juice as it gives a lovely colour to the cakes. When using fruit juice, use it cold.

INGREDIENTS

• 1 x 250g packet Fate Low Protein Cake Mix
• 65g soft margarine
• 125 mls unsweetened orange juice, or other fruit juice OR 125mls warm water
• few drops vanilla essence

METHOD

1. Pre~heat oven, Gas 5, 190°C 375°F
2. Place the Fate Cake Mix into a mixing bowl. Add the margarine and orange juice (or water and vanilla).
3. Mix for 1 minute with a wire whisk. Leave to stand for 1 minute, then stir before dividing the mixture into the paper cases.
4. Bake for about 20 mins until risen and browned. Remove from the tin and place onto a wire rack to cool.
5. Decorate with Glace icing, cherries or suitable sprinkles.
6. Place about 75g icing sugar into a bowl, and stir in about 4tsp of water or fruit juice. It should be thick enough to stick to the back of a spoon. Alter the consistency of necessary by adding more sugar or more liquid. Add a tiny amount of food colouring if you wish.
7. Quickly spoon onto the top of the cooled cakes. Add a piece of cherry or suitable sprinkles before the icing sets.
