This low protein, PKU version of Eve’s pudding is always popular. Eve’s pudding is a traditional British pudding made from apples and Victoria sponge cake mixture.

The apples are allowed to stew at the bottom of the baking dish while the cake mixture cooks on top.

The name is a reference to Eve and the Tree of Knowledge of Good and Evil.


  • 500g apples
  • caster sugar to taste
  • 1 x 250g Fate Cake Mix
  • 65g soft margarine
  • 125mls warm water
  • about 2 tsps demerara sugar for sprinkling


  1. Pre-heat the oven to Gas Mark 5/190 degrees
  2. Peel, core and slice the apples. Place them into an ovenproof dish about 1 1/2 litre capacity. Sweeten with caster sugar to taste.
  3. Place the Fate Cake Mix into a mixing bowl and add the margarine and the water.
  4. Mix quickly with a wire whisk for 1 minute. Leave to rest for a minute then stir. Pour onto the apples covering them completely.
  5. Sprinkle the top with a little Demerara sugar.
  6. Bake in the oven for 40-45 minutes until risen, firm and golden brown.
  7. Serve hot or cold.

This pudding freezes well, defrost before heating.

  1. Hi there, I live in new Zealand and we do not have the Fate cake mix. I am looking to make Eve’s pudding is there another way I could make it without that specific mix?

  3. There needs to be more information on the products, what is the fate cake, where can you find them, and what is the phe content. What is caster sugar, what is demerara sugar and how do you calculate for the correct total phe count for the total recipe. what is the correct oven temperature using electric oven? It sounds like a good recipe but I need to have all the facts as I have two adult children which are of the classic type PKU and the have to be very accurate so the phe levels don’t go up.
