Fate Apple and Cinnamon Muffins

INGREDIENTS

  • 200g apples such as Cox’s, Braeburn, or Granny Smith’s, peeled, cored and chopped into small pieces
  • 300g Fate All-Purpose Mix
  • 150g soft light brown sugar
  • 1 tsp baking powder
  • 1 1/2-2 tsps cinnamon
  • 120g soft margarine
  • 240mls unsweetened pure apple juice

METHOD

  1. Pre-heat the oven to Gas 6/200 degrees
  2. Place the Fate All Purpose Mix into a mixing bowl. Add the brown brown sugar, baking powder and cinnamon. Stir.
  3. Add the margarine and the apple juice and mix quickly using a wire whisk for about a minute until well blended and smooth.
  4. Stir in the chopped apples.
  5. Divide the mixture between 12 large muffin paper cases inside a muffin tin.
  6. Bake in a pre-heated oven for 25-30 minutes until risen and golden brown. Place on a wire rack to cool.

The muffins freeze well.
